A healthy side dish made simple with this easy five ingredient roasted broccolini with lemon and parmesan. Just mix, dip and roast for a delicious veggie side full of goodness and flavor.

Ingredients

  • 2 heads broccolini, thick ends cut off and leaves removed
  • 1/4 cup olive oil
  • zest + juice, 1 lemon
  • 1 tsp garlic powder
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1/4 cup shredded parmesan cheese

Instructions

  1. Preheat oven to 400 degrees F.
  2. Line a baking sheet with parchment paper.
  3. In a large bowl combine olive oil, lemon zest, lemon juice, garlic powder, sea salt and black pepper.
  4. Using tongs toss individual broccolini pieces in olive oil mixture and spread out evenly on baking sheet.
  5. Sprinkle evenly with parmesan cheese.
  6. Roast in oven for 15-20 minutes or until broccolini is crisp-tender with lightly browned edges.
