Fantastic recipe (as always)!!!
Just about to make this for my other half’s birthday dinner but I was wondering if I could use turkey bacon instead.
It contains less sodium so is a little healthier (she’s on a diet…again!)
Keep up those awesome recipes coz I’m always looking for inspiration in the kitchen:)

These look great! How do you think these would taste if I made a larger batch in the beginning of the week (precookingthe eggs) and then reheated them throughout the week?

In reply to Poorva. Sorry for the late reply! I've been out of the office for the holidays. I honestly can't stay if they'll stand up to reheating. In theory, yes they should be okay but I haven't tried it myself. If you do, please let me know how they turn out!

Oooh, these look great! I have a question, though: do they stand up well to reheating? I don’t always have the time to make a meal from scratch, but these look so yummy I’d love to have them on hand.

The second I saw this on Instagram, I knew I had to make it! Didn’t have bacon/avocado on hand (blasphemy, I know) so I made without, and this is COMFORT FOOD at its finest! Definitely will make again 🙂

I wish my boyfriend liked sweet potatoes more because they are one of my favorite starches and he’s more of a grain guy! I think he would like this if I tried making it for him however 😉
