Greek salad meets pasta in this delicious Greek Pasta Salad Recipe. The perfect marriage of hearty pasta with classic Greek veggies like cucumber, tomatoes, red onion and olives. Perfect for family get-together or easy meal-prep lunches.

Ingredients

  • 1 lb short cut pasta (rotini, fusili, penne and bowtie all work great)
  • 1 dry pint cherry tomatoes (or grape tomatoes), halved
  • 1 large English cucumber, diced
  • 1 bell pepper, seeded + diced
  • 1/2 cup chopped red onion
  • 1/2 cup kalamata olives, sliced
  • 1/2 cup crumbled feta cheese

For the Greek salad dressing:

  • 1/3 cup olive oil
  • 3 tbsp red wine vinegar
  • 1/2 lemon, juiced
  • 1/2 tsp garlic powder
  • 1 tsp dried oregano
  • salt + pepper, to taste

Instructions

  1. Cook pasta al dente according to package instructions.
  2. Drain pasta and run under cool water to bring to room temperature.
  3. In a large bowl combine cherry tomatoes, cucumber, bell pepper, red onion and kalamata olives. Stir in pasta and feta cheese.
  4. Top Greek pasta salad with salad dressing ingredients and toss to combine.
  5. Serve cold.
  6. Store in a large covered bowl or airtight container in the fridge for up to 5 days.
