oh…you can actually make it even healthier!! Do brown rice for the cilantro/lime rice, you can use low fat or no fat our cream, chopped tomatoes, you should also add lime zest/juice to the sour cream for a better kick, chopped japalenoes, eat one time with low carb/healthier tortillas, make tacos out of it, use fat free refried beans, make a dinner bowl out of it, DO a plate of Chipotle nachos, etc. Mix & match & eat all week off of it!! Amazing! Cook extra chicken, when storing in the fridge, I also put everything in separate containers on a tray, try once with oven roasted veggies, another time do shrimp to change it up again.
